A 19th-century classic, originally called 'John Collins' in London; the 'Tom' version became popular in the US. It's the archetype of the tall, refreshing gin sour.

lemon juice 1 oz
simple syrup 0.75 oz
soda water top

Instructions

Add gin, lemon juice, and simple syrup to a shaker with ice. Shake well and strain into a highball glass filled with ice. Top with soda water and stir gently. Garnish with a lemon wheel and cherry.
